Winter Sides: Delicata Squash Two Ways

The last of my new sides recipes is right here! Make either or both of these versions of this delicious squash for your table. They are both dairy free and if you leave out the miso, gluten free as well! (Still super delicious) here’s the recipe!

Recipe:
Cut and seed 3-4 Delicata squash
Drizzle with 1-2 tbs olive oil and season to taste with salt and pepper
Roast at 400 for 15 min and flip
Roast another 10-15 min until tender, golden and caramelized

For the spinach version:
Sauté 10oz spinach in bunches with 1tbs olive oil. Season with salt, pepper and garlic powder. Add more spinach as it wilts down until done. Taste and adjust seasoning if necessary. Once spinach has wilted squeeze 1/2 lemon, cook another 30 seconds and remove from heat
Plate with spinach on bottom, then squash and drizzle with chopped Calabrian chili and flaky sea salt

For Miso Tahini version:
Mix 4tbs water and 1tsp pomegranate molasses. Add to a bowl with 2-3tbs tahini. Mix well. Add pinch each of salt, pepper, garlic and mix well
Plate squash, drizzle with miso-tahini and top with black and white sesames, fresh pomegranate perils and a dusting of sumac and flaky sea salt
