For the London Pizza Festival, Oi Vita to give the classic Capricciosa a refresh
To give the classic Capricciosa a summer refresh, the London pizzeria Oi Vita applies all but one of its traditional toppings - prosciutto cotto, artichokes, mozzarella, olives – after bake. Only the cherry tomato sauce hits the pizza base prior to its oven entrance. The uncooked components bring new life to one the oldest set pieces in the Italian pizza repertoire.
To further personalise the Capricciosa he's created for the London Pizza Festiva, pizzaiolo Nicola Apicella employs both grilled artichokes and artichoke chips, cream-saturated stracciatella for the mozzarella and a dusting black olive powder power rather than whole of halved black olives.
