Potato Kurma is a popular South Indian dish that combines the potato with a rich and aromatic coconut-based gravy. Ingredients
Chopped potatoes – 3
Julienned garlic – 10 cloves
Slit green chilli – 6
Sliced onion – 2
Curry leaves – 4 sprigs
Chopped tomato – 2
Turmeric powder – ½ tsp
Garam masala powder – 2 tsp
Grated coconut – 1 ½ cups
Saunf / fennel seeds – ¾ tsp
Cardamom – 1
Clove – 1
Cinnamon stick – 1 small piece
Finely chopped shallot / small onion – 10
Red chilli – 2
Coconut oil – 1 ½ tbsp
Salt – to taste
Water – 2 ½ cups
Process
1. Heat 1 tbsp of coconut oil over medium flame in a pan
2. Add 10 julienned garlic and 6 slit green chilies
3. Sauté this for 1 minute and add 2 sliced onions,2 sprigs of curry leaves and a little salt
4. Add 3 chopped potatoes, 2 chopped tomatoes, ½ tsp of turmeric powder and 2 tsp of garam masala powder
5. Sauté this for 5 minutes
6. Now add 2 cups of water, close it with the lid and cook till the potatoes are cooked
7. Meanwhile grind 1 ½ cups of grated coconut, ¾ tsp of saunf, 1 cardamom, 1 clove and a small piece of cinnamon stick
8. Add a little water and grind this into a fine paste
9. Now the potatoes are done
10. Add the coconut paste, a little water and 1 sprig of curry leaves
11. Mix well
12. When it starts boiling, turn off the flame
13. Heat of 3 tsp of coconut oil in a pan and add 10 finely chopped small onions, 2 red chillies and 1 sprig of curry leaves
14. When the onions turn light brown, add this into the gravy
15. Close it with the lid and allow it to set for 30 minutes.
16. Potato kuruma is ready to serve.This will go well with chapati, dosa and appam
