Viennese Melt Away Cookies ~ European Butter Cookie Recipe ~ Eggless Cookies ~ Noreen's Kitchen

Here is the first cookie of the Christmas season here on my channel! These delicate, European style butter cookies are the perfect crispy, buttery bite. They remind me a lot of the Danish butter cookies from my childhood. Not the kind you can buy today which are mass made and not very delicious. These Viennese Melt Away cookies are going to make everyone happy!

The dough is very soft and easily passed through a pastry bag. I tried to put this through my new cookie press but it is much too soft and it did not hold the pattern. So I will be doing the cookie press cookies in a couple of days and will be sure to share those with you!

The secret to these cookies is beating the sugar and butter for 5 to 7 minutes until it is very pale yellow but almost white and very fluffy. The other secret is the corn starch which gives these a very tender crumb. Notice that these cookies have no eggs so for everyone who needs an eggless cookie, these are a great option!

I piped this dough onto impeccably clean baking sheets that have no spray, butter, grease or parchment. You will want to have them just clean and dry in order for the cookie to properly bake. When they come out of the oven leave them on the baking sheet for 5 minutes and let the residual heat from the pan work it's magic. Remember, carry over cooking is your friend! Then just remove to a wire rack to cool completely.

You can store these delicious cookies in an airtight container at room temperature for up to three weeks. So these can be easily made ahead for your cookie trays and exchanges. You can also freeze these baked cookies in an airtight container or wrapped in both plastic and foil for up to three months.
