My Secret Recipe (Heavenly Whipped Shortbread) - Rise Wine & Dine - Episode 21

Ingredients you need

1 Lb Butter (Softened, at room temp)
1/2 Cup Cornstarch
1 tsp Vanilla
3 Cups White Flour
1 Cup Icing Sugar

Preheat Oven to 350 Degrees.

First of all beat the Butter until it turns a very very pale yellow, almost to a white look. This is one very important step if you are searching for a melt in your mouth type of Shortbread, indeed.

Next add the Vanilla in with the Butter and beat again until completely incorporated.

Now using another clean medium or large size bowl put all 3 other dry ingredients into this bowl and whisk together to ensure that all dry ingredients have been well blended.

Right now add 1/3 of the Flour mixture into the Butter mixture and stir or beat very slowly as if you go fast the Flour will go everywhere.

Continue to incorporate the other 2/3 and the 3/3 intervals of Flour into the Butter mixture again while stirring and or beating very slowly again so the Flour wont go everywhere.

Right now the Buttered bowl should come clean especially since all of the batter should come together no problem at all, in one big ball.

Now pinch off about 1 inch balls and lay each ball onto a Parchment lined baking sheet with 12 balls going onto each baking sheet. Flatten out with the palm of your hand for each ball. Ensure hands are very very clean as usual to do this step especially. Once you've got the 12 balls of dough onto each sheet and flattened out with the palm of your hand, sprinkle on the desired sprinkles for the occasion in which you are celebrating. Shortbread can be left undone when it comes to sprinkling them as well, if desired.

Now place the cookie sheet into the Preheated Oven on 350 Degrees for only 7 minutes. If you bake longer, In My Opinion the Shortbread will tend to be more dried out then tender. That's not usually a good idea :)

Once they come out of the Oven, let the Shortbread cool completely and then transfer onto a wire rack and or place into an airtight container for up to 1 week In My Opinion in the Fridge.
