Purslanes, or Portulaca oleracea or verdolagas, are edible and much more nutritious than many other crops. It's considered a "superfood" and is showing up in farmers' markets and restaurants nationwide. Its tangy, lemony flavor makes it a great substitute for watercress, spinach, and arugula, which may be used in salads, sandwiches, stews, and scrambled eggs like this recipe.
