Blackened Chicken Sweet Potato Brussels & Brocoli | Easy Meal Prep | Healthy Cooking | Clean Eating

This blackened chicken sheet pan dinner with sweet potatoes, broccoli and brussels sprouts is easy, healthy, and quick. Perfect for weeknight dinners and meal prep!

Ingredients
3 chicken breasts

Blackening Seasoning (Use store-bought if desired):
2 teaspoons Italian seasoning
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1/2 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon cayenne
1/2 teaspoon cane sugar
1/4 teaspoon garlic powder


Broccoli & Brussels Sprouts:
2 cups of broccoli
2 cups of brussels sprouts, halved
2 Tablespoons olive oil
1/2 teaspoon seat
1/2 teaspoon white pepper


Sweet Potatoes:
4 cups sweet potatos, cubed
2 Tablespoons olive oil
1/2 teaspoon sea salt
1/2 teaspoon ground chilli powder
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon black pepper


Instructions
Preheat the oven to 400º. Line a baking sheet with parchment paper or spray with cooking oil.
Mix together the ingredients for blackening seasoning in a small bowl. Place chicken breasts on the baking sheet and sprinkle with seasoning, flip and repeat.
Spread sweet potatoes and brussels sprouts in the remaining space on the sheet pan. Drizzle with olive oil. Sprinkle seasonings.
Place into the oven and bake 20-25 minutes, removing halfway to flip chicken and gently toss veggies.
