Ingredients for first variety of Payasa:
Grated Coconut - 1/2 Cup )I used only white portion)
Cardamom - 2
Mangoes - 2 (I used Alphanso Mangoes)
Powdered Jaggery - 5 Tbsp
Salt - 2 Pinches
Method:
1. Add 1/2 Cup of grated Coconut to the mixer jar. I have used only the white portion of the Coconut. Add 2 peeled Cardamom seeds. Add a little water and grind to a smooth paste. Keep aside.
2. Cut the top part of the Mangoes and peel them with the help of a peeler. Squeeze the Mangoes directly into the bowl. Do not grind them in a mixer grinder. It will become Juice not Payasa. Squeeze the Mango properly and leave some larger chunks. Add a little water to the seed of the Mango and remove the pulp from it.
3. Add 5 Tbsp of Powdered Jaggery. Add 2 pinches of Salt and mix well. Adding Jaggery totally depends on the sweetness of the Mango. Keep it aside for 5-10 minutes to dissolve the Jaggery. Now add the prepared Coconut paste to it. Add washed mixer jar of water and mix it.
Jaggery-Coconut-based Mango Rasayana/Payasa is ready to serve.
Ingredients for second variety of Payasa:
Mangoes - 2 (I used Alphanso Mangoes)
Sugar - 4 Tbsp
Milk - 1/2 Cuo
Cardamom Powder - 1/4 tsp
Method:
1. In the same way, I have squeezed the two Mangoes as shown before.
2. Add 4 Tbsp of Sugar and mix well and keep aside for 10 minutes to dissolve the Sugar properly. You can add powdered Sugar if you want to make it faster.
3. Once the Sugar dissolved properly, add 1/2 Cup of Milk. Add 1/4 tsp of Cardamom Powder and mix well.
Now the Sugar-Milk-based Mango Payasa/Rasayana is ready to serve.
This Sugar-Milk-based Mango Payasa/Rasayana can be served with Chapati or with Ottu Shavige.
