Ice cream cone dessert amuse

Oven temperature: 170 degrees Celsius

Ice cream cone
• Brique dough
• Melted butter
• Sugar

Coffee gel
• 300 grams of espresso
• 100 grams of ginger syrup
• 100 grams of orange juice
• 40 grams of sugar
• 5 grams of agar powder

Jerusalem artichoke crème
• 150 grams of Jerusalem artichoke
• 120 grams of milk
• 65 grams of sugar
• 80 grams of egg yolks
• 25 grams of corn starch
• 60 grams of dark chocolate

Meringue
• 165 grams of sugar
• 50 grams of water
• 100 grams of egg white
• 25 grams of sugar

Caramel sauce
• 150 grams of sugar
• 75 grams of glucose
• 150 grams of double cream

Chocolade glaze
• 200 grams of dark chocolate
• 100 grams of cacao butter
