King Oyster Mushrooms Chinese Recipe - 杏鲍菇炒肉丝，香滑鲜嫩

King oyster mushroom is the largest species in the oyster mushroom genus. It is grown in many parts of Asia, the Middle East, south Europe, and north Africa. It is thick, tender, has a rich umami flavor and a meaty texture. Sometimes it is served as the "vegetarian steak". This stir-fried king oyster mushrooms with shredded pork is a common Chinese family dish. Ingredients:
- 2 king oyster mushrooms (350-400g)
- 125g pork tenderloin
- 2-3 green onions

Marinade:
- 1 tbsp (15ml) Chinese cooking wine
- 1 tbsp soy sauce
- 1/2 tsp (2.5ml) baking soda
- 1 tsp cornstarch
- 1 tbsp water
- 1 tsp oil

Condiments:
- 20g peanuts
- 4-6 dried chilies (adjust as necessary)
- 1.5 tsp salt
- 1 tsp sugar
- 1 g five-spice powder

Cooking sauce:
- 1 tsp cornstarch
- 1 tsp (5ml) rice vinegar or black vinegar
- 1 tbsp soy sauce
- 1/2 (2.5ml) dark soy sauce
- 1 tsp oyster sauce
