Resep Ikan Steam Hong Kong. Ikan Steam Hong Kong biasanya menggunakan ikan kerapu yang dikukus dengan bumbu spesial dan kecap asin. Lembutnya ikan dipadukan dengan rasa gurih dan harum dari bumbu khas Hong Kong ini.
Resep Ikan Steam Hong Kong (untuk 2 porsi)
Bahan:
1 ekor ikan kerapu (±500gr)
1 buah jahe, iris
2 batang daun bawang, potong
Kecap asin:
70 ml kecap asin
350 ml air
3-4 sdm gula
½ sdm Royco Kaldu Rasa Jamur
30 ml sake
2 batang daun bawang, potong
1 batang akar dan batang daun ketumbar
Minyak panas:
70 ml minyak
1 buah jahe, potong
Garnish:
1 buah jahe, iris
3 batang daun bawang, iris
1 buah cabai merah, iris
2 batang daun ketumbar
Langkah:
1. Untuk garnish, rendam irisan daun bawang dan cabai merah di dalam air dingin kemudian masukkan garnish di dalam kulkas
2. Untuk kuah kecap asin, tumis daun bawang dan akar daun ketumbar dengan sedikit minyak kemudian glaze dengan sake, masak sebentar lalu masukkan air, kecap asin, gula dan royco kaldu rasa jamur dan masak hingga mendidih
3. Bersihkan ikan, keringkan dengan tisu lalu sayat-sayat kedua sisi badan ikan. Siapkan piring tahan panas lalu letakkan daun bawang dan jahe kemudian taruh ikan di atasnya
4. Siapkan panci dengan air mendidih, alasi dengan mangkuk tahan panas dan letakkan piring di atasnya kemudian kukus ikan selama 5-7 menit atau tergantung ukuran ikan
5. Untuk minyak jahe, masak jahe dan minyak hingga jahe berwarna kecoklatan dan kering
6. Sisihkan daun bawang di dasar piring kemudian siram dengan kuah kecap asin lalu beri garnish irisan daun bawang, cabai, dan jahe di atas ikan kemudian tuang minyak panas lalu beri garnish daun ketumbar di atasnya
7. Ikan steam hongkong siap disajikan

Hong Kong Steamed Fish Recipe ala Restaurant
Hong Kong Steamed fish is usually made using a grouper steamed with a special sauce and soy sauce. The soft fish is paired with the savoriness and fragrance of the Hong Kong-style sauce.
Hong Kong Steamed Fish Recipe (yield: 2 servings)
Ingredients:
1 pc grouper (±500 g)
1 pc ginger, sliced
2 pc green onion, sliced
Sauce:
70 ml soy sauce
350 ml water
3-4 tbsp sugar
½ tbsp Royco Mushroom-flavored Stock
30 ml sake
2 pc green onion, sliced
1 pc cilantro root and stem
Hot oil:
70 ml oil
1 pc ginger, sliced
Garnish:
1 pc ginger, sliced
3 pc green onion, sliced
1 pc red chili, sliced
2 pc cilantro leaf
Steps:
1. For the garnish, soak the sliced green onion and red chili in cold water. Place in the fridge.
2. For the sauce, sauté the green onion and cilantro root with a bit of oil. Deglaze the pan with sake and cook for a bit. Then, add the water, soy sauce, sugar, and Royco’s Mushroom-flavored Stock. Bring to a boil.
3. Clean in the fish. Pat dry with tissue and slice both sides of the fish. Prepare a heatproof plate. Add the green onion and ginger to the plate and place the fish on top.
4. Prepare a pot with boiling water. Place a heatproof bowl at the base and place the plate on top. Steam the fish for 5-7 minutes or depending on the size.
5. For the ginger oil, cook the ginger in oil until it browns and becomes crisp.
6. Add the green onion at the base of the plate. Add the fish and pour the sauce on. Garnish with the green onion, chili, and ginger. Pour the hot oil on and garnish with cilantro leaves.
7. Hong Kong Steamed Fish is ready to serve.
