The Homestead Wife Makes Fire Cider Tonic

And, finally…here’s the recipe! This is very general, and should be adjusted to respond to ingredients available and personal taste.

Fire Cider
In a one gallon jar or crock, combine:
3-4 white onions, peeled and chopped
1 pound horseradish root, peeled and chopped (grated if convenient)
1 pound ginger root, peeled and chopped (grated if convenient)
3 heads garlic, peeled and chopped
4 jalapeno peppers, chopped
3-4 lemons, zested and cut into wedges
2 Tbsp dried rosemary, or fresh rosemary, as much as you want
2 Tbsp dried thyme, or fresh thyme, as much as you want
1 tsp cayenne pepper, or to taste (It’s okay to add this at the end, so you can judge how much you want. Tastes vary WILDLY.)
2 liters of quality organic apple cider vinegar, or enough to cover
Close jar and infuse 4 to 6 weeks, shaking daily or as often as you think of it.
Decant liquid. Strain if desired through single layer muslin or double layer cheesecloth.
If desired, add honey to taste.
We take a tsp to a Tbsp per day in the wintertime, or up to three times a day when feeling poorly. You can also put it on salads or use as a marinade. Some people (like Esther and Sadie) may drink it just for fun.
