You speak; I listen! A lot of you have asked me on my Costco haul videos about my thoughts on the KETO BREAD that Costco sells. Well, TODAY IS THE DAY! I was walking down the bread aisle, saw the bread and took a look at the ingredient list...and realized I MUST break this product down for you all!! Let's dive in and I'll see you in the COMMENTS!!

Costco Keto Bread:
17 slices per loaf
40kcals per slice
Fat: 1.5g
Carbs: 12g
Fiber: 12g
Soluble Fiber: 2g
Insoluble Fiber: 10g
Protein: 4g

Ingredients: bread base (modified wheat starch, wheat gluten, inulin or chicory vegetable fiber, oat fiber, wheat protein isolate), water, soybean oil, contains less than 2% of the following: yeast, salt, sorbic acid (mold inhibitor), fully hydrogenated soybean oil, distilled vinegar, ascorbic acid, calcium propionate (mold inhibitor, enzymes)

Wheat Gluten

By triggering the production of the protein zonulin, gluten causes the tight junctions in the gut to open. Gluten proteins then leak into the bloodstream. Your body responds by making antibodies against these proteins, which have the potential to cross react with thyroid tissue. In other words, the gluten antibodies also can also cause your immune system to attack your thyroid, causing functional hypothyroidism and a slowed metabolic rate.

Wheat gluten consists of the prolamin gliadin and the glutelin glutenin.

Prolamins are storage proteins and glutelin is the glue that holds everything together.

Tissue transglutaminase (TGase) is an enzyme present in all tissues and is involved in many critical body functions. TGase II plays an integral role in the development of celiac disease.

TGase II is responsible for the deamidation of gliadin in the small intestinal mucosa. Deamidated gliadin becomes more immunogenic, resulting in the production of proinflammatory cytokines.

This inflammatory response leads to antibodies to TGase II. In early stages of celiac disease, these antibodies can be found in the small intestine, and as the disease progresses, in the serum.

TGase II antibodies have been shown in numerous studies to interact with the TGase II enzymes in different organs.

It has also been found that there is a positive correlation between TGase II antibodies and anti-TPO (antithyroperoxidase) antibodies, organ-specific antibodies which attack thyroid tissue.

This study (Experimental and Clinical Endocrinology & Diabetes) found that a 6-month gluten-free diet improved markers of autoimmune thyroid disease (AITD) in afflicted women:

Modified Wheat Starch

Modified Food Starch is used as a gluten-free source of fiber - so here, they’ve added it to boost the fiber contain, except they decided to use wheat

Wheat starch has been processed to remove the protein (gluten) and it must meet the standards of the FDA to be less than 20 parts per million (ppm)

Chicory Root

Chicory root/inulin is included to increase the fiber content - it's broken down rapidly in the large intestine (travels intact to the colon/large intestine), which can trigger symptoms like gas, belly bloat, abdominal pain, etc.

In one study, published in The Journal of the Academy of Nutrition and Dietetics, participants suffered no discomfort with inulin in up to 10g, but more than that resulted in gas and bloating in some of the participants (the keto bread has 12g of fiber per slice)
