Hottest New Restaurant in Oslo – Skaal Matbar
Skaal Matbar opened in November of 2019 and has quickly become Oslo's hottest new restaurant. Even without the option of table reservations, the people of Oslo are lining up outside for up to two hours in the freezing cold. That is unheard of in Norway!
Owner and manager Fridtjof Seeberg wanted to create a food bar, a restaurant with a bar vibe, where people could scale the experience as they please. At Skaal Matbar, you can pop by for a drink, grab a snack, or have a full meal. Some of the highlights on the menu include oysters with Amalfi lemons, Skaal's layered potato "fries" with whipped crème fraîche and dill oil, and toast with cheddar and jalapeños. Chef Matthew Webber also creates incredible vegetable-focused dishes like deep-fried eggplant with hummus and jalapeño salsa, and parsnip with apple, yogurt, and black sesame seeds. All dishes are served on plates or in bowls from the young, Oslo-based ceramicist Anette Krogstad.
