Ep 24: Prawn Saganaki - Kamado Joe Classic 2!

In this episode, Geoff the Chef demonstrates how to make this delicious Prawn Saganaki. What a cracker! Grilled… baked… rich… good lord!
This dish is amazing served individually or adjust the recipe to make a larger group style share plate.

Try to resist diving your face into it!

Ingredients (Double this for a share plate to serve 4-6 with rice or sides…)
• 8-10 large prawns
• 1 tin whole tomatoes, pureed
• ½ onion fine dice
• 1-2 cloves garlic
• ½ teaspoon thyme
• 1 teaspoon oregano
• 1 teaspoon brown sugar (to taste)
• Half to a teaspoon salt (to taste)
• Cracked pepper
• Good shake of cayenne
• 1 teaspoon smoked paprika
• Toppings of dill or chives
• Feta to crumble (You don’t have to use Dodoni – but if you don’t … we can’t be friends.)
• Olive oil
• Bread …. Lots of bread….

I used Lanes ‘Sweet Heat’ to season prawns. I love it! You can just use a touch of salt, pepper and cayenne as a substitute.
