A fun episode to start our New Year folks, John carries on with the path building, and Tara gets into the kitchen to rustle up some pretty unusual chocolate brownies...it's not what you think!

Here is the delicious brownie recipe:

Ingredients: 2 medium sweet potatoes, 65ml olive oil, 200ml oat milk, 10 pitted dates, 200g self-raising flour, 1 tsp baking powder, 100g coconut sugar, 50g cacao powder, 2 tsp sea salt, 200g 70% dark chocolate (half melted, half roughly chopped), 1 tsp vanilla extract

Method: Preheat the oven to 180°C/350°F
Put the peeled, chopped sweet potato chunks onto a baking tray, pour over 1 tablespoon of olive oil and mix to coat the potato. Roast for 35 minutes tossing halfway through until soft and golden. Leave to cool.
Place the cooled sweet potato chunks, oat milk and pitted dates into a food processor and blitz until smooth.
Place the flour, baking powder, coconut sugar, cocoa powder and 1tsp of sea salt in a large bowl; whisk until combined with no lumps. Pour in the blended sweet potato, date and oat milk mixture, along with the melted chocolate, remaining olive oil, vanilla and the chocolate chunks. Stir until you have a smooth, thick batter.
Tip the batter into a baking tin and bake for 25 minutes. Allow to cool and enjoy!
