Phyllis Stokes' German Chocolate Cake with Chocolate Buttercream Frosting
One of my all-time favorite of my Mom's desserts. She first gave us this recipe in 2010. I followed the cake recipe to the letter but modified the frosting a bit. I'm very pleased with how this turned out despite the fact that I'm not much of a baker.
Cake ingredients:
- 1 package (4 oz) of Baker's German's Sweet Chocolate (48% cacao)
- 1/2 cup water
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (2 sticks) non-salted butter, softened
- 2 cups of sugar
- 4 eggs separated
- 1 teaspoon vanilla extract
- 1 cup buttermilk
Cake directions:
1. Microwave water and chocolate for approximately 2 minutes, stirring every 30 seconds, until chocolate is melted completely
2. Mix flour, baking soda, and salt together in a separate bowl and set aside
3. Beat softened butter and sugar together with an electric mixer until light and fluffy.
4. Add 4 egg yolks 1 at a time beating well after each addition
5. Mix in melted chocolate and vanilla
6. Mix in flour mixture 1 cup at a time, alternating with 1/3 of a cup of the buttermilk. Beat well until well blended.
7. In a separate bowl, whip egg whites with an electric blender until stiff peaks form. Fold whipped egg whites into cake batter.
8. Pour into greased pan and bake at 350 for 30 minutes or until toothpick inserted into cake comes out smooth.
9. When done, allow to cool before applying frosting (this was always my mistake--a hot cake will melt icing/frosting).
Buttercream Ingredients:
- 1/2 bar (2 oz) of German's Sweet Chocolate (48% Cacao)
- 1/2 cup water
- 1 stick (8 tablespoons) of unsalted butter (softened)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 4 cups of powdered sugar
- 1-2 tablespoons of milk (or evaporated milk, or heavy cream)
Buttercream Frosting Directions:
1. Beat butter with electric mixer until light and fluffy (about 3-4 minutes)
2. Mix in melted chocolate, salt, and vanilla extract.
3. Mix in powered sugar 1 cup at a time.
4. Add milk as required until desired smoothness achieved.
