Recipe:

400g sugar
3 lemon zeste
6 whole eggs

3cl (30g) lemon juice
1g fleur de sel
190g liquid cream

375g sift flour (T45)
3/4 tsp backing powder

135g soft butter; melted and cooled

150g lemon confit

Bake: 180°C 🔥 40 or 50minute

50g sugar
