I know carbo on carbo sounds unusual but the potatoes and cucumbers make a great combination for this potato salad toast sandwich. I encourage you to give it a try!

Tips
Taste the potato salad before toasting and add some salt pepper and mayonnaise if you need too.
Seal the bread edges with your fork but press the edges with your fingers if it doesn't work with the fork.
Create your own filling such as ham with the potato salad.
I cut the edges in this video but you can leave them if you like.
If we don't seal the bread edges you can toast them straight away.
We don't need to use all the potato salad for toasting so put them in the fridge and eat them later on a potato salad itself.
Squeeze the cucumber well to get rid of the water after salting and leaving for while.

5 Potatoes
1 Cucumber
1tsp Salt (for cucumber)
7Tbsp Mayonnaise
1/2tsp Salt
Some pepper
2tsp Butter(for toasting)
Some mozzarella cheese
Some whole grain mastard (optional)
2 slices of Loaf bread
