食材 ingredients

-----麻兹 mochi ----- ( 會有多出的麻兹, there will be some extra mochi)
糯米粉 glutinous rice flour 45g
粘米粉 rice flour 35g
玉米粉 corn starch 20g
玉米油 corn oil 18g
牛奶 milk 180g
細砂糖 caster sugar 30g

-----水皮 pastry ----- ( 切成八段 divide into 8, 每粒大約 around 36g each)
無鹽牛油 unsalted butter 55g
普通麵粉 all purpose flour 160g
鹽 salt 1/2 tsp
水 water 70ml
糖粉 icing sugar 1tsp

-----油皮 oil dough----- ( 切成八段 divide into 8, 每粒大約 around 20g each)
無鹽牛油 unsalted butter 65g
普通麵粉 all purpose flour 100g

-----餡料 filling-----
紅豆泥 red bean paste - 每粒 30g each
麻兹 mochi - 每粒 20g each
鷄絲 chicken floss - 每粒 10g each
鹹蛋黃 salted egg yolk 6

【溫度 Temperature】
-----水蒸 steam-----
- 預熱+上下火 （15分鐘）
- Preheated + upper&bottom heat (15mins)

-----烘烤 bake-----
- 預熱+上下火 （40分鐘）210c
- Preheated + upper&bottom heat (40mins) 210c
