Salad Base:
3 cups English cucumber (peeled & cubed – about 2 large cucumbers)
2 large tomatoes, cubed (~1 cup)
2 hard-boiled eggs, chopped
¼ cup red onion, finely chopped
½ cup celery, chopped (about 3 stalks)
⅓ cup dill pickles, finely chopped
Creamy Cottage Cheese Dressing:
1 tablespoon apple cider vinegar
1 cup cottage cheese
¼ cup mayonnaise
1 tablespoon yellow mustard
¼ cup fresh parsley or cilantro (finely chopped)
¼ teaspoon garlic powder
¼ teaspoon paprika
¼ teaspoon salt
🥣 Instructions:
In a large bowl, combine the cucumbers, tomatoes, eggs, celery, onion, and pickles.
In a separate bowl, mix the cottage cheese, mayo, mustard, vinegar, garlic powder, paprika, and salt until smooth.
Pour the dressing over the salad ingredients. Add parsley or cilantro. Stir to combine.
