TOP 3 Dominican Style Mofongo recipes I have ever had! DELICIOUS!!!

Ingredients:
[Mofongo]
2 cups oil for frying
1 large (or 2 small) unripe plantains (per person), peeled, cut into 3/4" [2 cm]
slices
4 oz pork cracklings (meaty chicharron), cut into 1″ [2.5 cm]
pieces
1/2 garlic clove, mashed
1/4 tsp salt, (or more, to taste)

[Optional Red Onion Escabeche]
1 Red onion, sliced
4 Tbsp apple cider vinegar
2 Tbsp olive oil
Salt & pepper

Directions:
Heat oil over medium heat and fry the plantains till golden brown all over (3-5 mins). Remove from the oil and place on a paper towel.
Crush plantains: Using a pilón (or any mortar & pestle) crush the garlic and salt, add in plantains and mash, then add cracklings and crush to combine with the plantains (You might have to divide the ingredients and do it in batches to fit in your pilón).
Shape into balls and place in small serving bowls
Garnish with optional red onion escabeche
[Optional Red Onion Escabeche]
Soak the onion in the vinegar with salt and pepper, for at least 15 minutes
Heat oil to med heat and add the onions and vinegar
Sweat at medium heat for 8 minutes (Do not brown the onions) until very translucent
Serve hot
