Ingridients:
Urad dal 3/4 glass -उरद दाल 3/4 ग्लास
Rice 2 glasses - चावल 2 ग्लास
Tomato 2 - टमाटर 2
Onion 2 - प्याज 2
Carrot 1 - गाजर 1
Green chilies 7 - हरी मिर्च 7
Salt 1 1/2 teaspoons - नमक 1 1/2 चम्मच
Turmeric less than 1/4 tsp - हल्दी 1/4 चम्मच से कम
Oil for cooking - तेल पकाने के लिए
Gunpowder - पिसा हुआ मसाला (gunpowder)
Recipe:
1. Soak the Dal and Rice:
- Take 3/4 glass urad dal and 2 glasses rice in a bowl.
- Wash them 2-3 times with water.
- Fill the bowl with clean water and cover it with a plate.
- Let it soak aside for 4 hours.
2. Grind the Mixture:
- After 4 hours, drain the water from the soaked urad dal and rice.
- Grind the mixture into a fine paste.
- Cover the ground paste with a lid and let it sit aside for another 4 hours.
3. Prepare the Batter:
- After 4 hours, take the batter and add finely chopped tomatoes, onions, green chilies, and grated carrots.
- Add 1 1/2 teaspoons salt and less than 1/4 teaspoon turmeric.
- Mix everything well to combine. The batter is now ready.
4. Cook the Uttapams:
- Heat a dosa pan or non-stick skillet on medium flame.
- Pour a ladleful of batter onto the pan and spread it into a round shape.
- Drizzle some oil around the edges and on top of the uttapam.
- Sprinkle some gunpowder on top of the batter.
- Let it cook on medium flame until the uttapam turns golden brown and crispy.
5. Serve:
- Once cooked, remove the uttapam from the pan.
- Serve hot with pickle, tomato sauce, or sambar.
