Sweet Potato Harvesting and Curing
Here's most of my 2013 harvest of sweet potatoes from my in ground, and raised bed gardens. We planted probably 3 or 4 times as many sweet potatoes as last year - probably about $16 worth of plants total. I've dug probably 3/4 of them, and have yielded about 90 pounds of potatoes. I use a harvesting and curing process I found on the Purdue University website, and it works flawlessly. If you follow these instructions in the PDF below, the sugars in your sweet potatoes will mature, they'll taste great, and they'll keep if properly stored for about 8 months.
