Oxtail Stew from Scratch (Irish Style)

I wanted to make a stew like back home in Ireland but you can't buy pre-made oxtail soup. I decided to make my own using fresh oxtails.

For the recipe I used:

For the Base
1 to 2 fresh oxtails - depending on size
Trim and coat in cornstarch and Bovril powder (or other beef seasoning)
Fry in hot oil, browning on all sides
Add to crock pot with:
1 large carrot
3 stalks of celery
1 onion
1 tablsps of Ginger
1 heaped teasp of Crushed garlic
1/2 teasp of sage, rosemary and basil (or use a bouquet garni)
2 bay leaves
4 beef stock cubes
Make a pase using 2 tablespoons of left over cornstarch and Bovril powder
Cover with boiling water

Boil for 3 to 4 hours
Remove excess fat, remove the oxtail and veg (debone the oxtail while hot)
Strain the stock and return to pot.

For stew:
Add potatoes, carrots and celery and simmer for a further 2 hours in your crock pot.

Thicken as required and make sure there are no bones in the stew. Serve and enjoy :-)
