Puffy Chicken and Guacamole Tacos - it’s Tex-Mex!

Growing up in San Antonio, Tex-Mex foods were our favorite! Puffy tacos are a favorite there, and making them is actually pretty easy. I will be making the tortillas, frying them up nice and puffy, along with making Mexican chicken and guacamole.

I am using my home canned chicken (ugly chicken) and my home canned salsa ranchero (roasted tomato, Chile peppers, and onion), but I will give some ideas for substitutions.
