How to Make the Best Sweet Potato Gnocchi

Ingredients:
- 2 sweet potatoes
- 4 tbsp butter
- Grapeseed oil
- 2 tbsp maple syrup
- 2 tsp cinnamon
- 1 tbsp brown sugar
- 2 tsp vanilla extract
- 1 1/2 cup of ricotta
- Grated nutmeg
- 2-3 cups flour
- 1 cup sage
- Salt and pepper for taste
- Parmesan cheese
- Lemon zest

1. Preheat oven to 375 °F
2. Coat sweet potatoes with grapeseed oil, butter, and a generous amount of salt
2. Bake for 45 minutes at 375°F
3. Spoon out sweet potato and season with maple syrup, cinnamon, brown sugar, vanilla extract, black pepper, salt, ricotta, nutmeg - blend well to get rid of inconsistencies
4. Slowly add flour and knead the dough
5. Cut off smaller pieces and roll out the dough - cut bite size pieces
6. Bring a pot of water to a boil and carefully drop in the gnocchi - once they rise to the top, they're ready to be taken out
7. Add butter to a preheated pan, add sage and boiled gnocchi
8. Add black pepper and a pinch of salt for taste - gnocchi should be golden brown
9. Serve immediately with a hint of parmesan and lemon zest
