If you follow my methods of cold smoking salmon at home you will achieve awesome results. I used to be employed in a traditional Scottish salmon smoke house and wanted to show you the traditional methods of curing salmon using a dry brine and drying the salmon properly prior to smoking salmon.
There are many videos out there showing that curing and drying salmon can be done quickly but they are not the proper methods to achieve perfect cold smoked salmon.
The process of curing salmon for cold smoking or drying salmon for cold smoking can not be done quickly.
