Huevos salados chinos - Chinese salted eggs
Los huevos salados tradicionalmente se elaboran utilizando huevos de pato y son uno de los alimentos en conserva más arraigados en la cultura de China y los países del sudeste asiático. Aunque no se conoce con exactitud la antigüedad de este manjar, se cree que los chinos ya los consumían durante el inicio de la dinastía Ming en el siglo XIV, lo que demuestra su longevidad en la gastronomía regional.
El proceso de curación de los huevos de pato salados se puede llevar a cabo de 3 formas; sumergiendo estos en una solución salina o salmuera, cubriendo los huevos con sal y una pasta hecha a base de arcilla o carbón o bien cubriendo las yemas directamente con sal. En mi caso os mostraré cómo hacerlos en salmuera.
Durante el proceso de curado, la yema se solidifica y endurece gradualmente, mientras, que la clara adquiere una consistencia muy acuosa debido a la pérdida de viscosidad. El sabor de la yema salada es único y peculiar. Los huevos salados, y en particular las yemas saladas, tienen un sabor que combina la riqueza de la yema de huevo con la intensidad de la salinidad.

Salted eggs are traditionally made using duck eggs and are one of the most deeply rooted preserved foods in the culture of China and Southeast Asian countries. Although the exact age of this delicacy is not known, it is believed to have been consumed by the Chinese as early as the beginning of the Ming Dynasty in the 14th century, demonstrating its longevity in regional cuisine.
The curing process of salted duck eggs can be carried out in 3 ways; dipping them in a saline solution or brine, covering the eggs with salt and a paste made from clay or charcoal or covering the yolks directly with salt. In my case I will show you how to make them in brine.
During the curing process, the yolk gradually solidifies and hardens, while the white acquires a very watery consistency due to the loss of viscosity. The flavor of salted yolk is unique and peculiar. Salted eggs, and in particular salted yolks, have a flavor that combines the richness of the yolk with the intensity of the saltiness.
