• 1 tbsp soy sauce
• 1 tbsp honey
• 1 tsp garlic powder
• 1 tsp paprika
• Wooden skewers, soaked in water for 30 minutes
For the Bang Bang Sauce:
• 1/4 cup mayonnaise
• 2 tbsp sweet chili sauce
• 1 tbsp sriracha sauce (adjust to taste)
• 1 tbsp honey
• 1 tsp lime juice
• 1/2 tsp garlic powder
Instructions:
1. Prepare the Chicken: In a large bowl, combine olive oil, soy sauce, honey, garlic powder, paprika, salt, and pepper. Add the chicken pieces and toss to coat evenly. Let the chicken marinate for at least 15 minutes, or up to 2 hours for deeper flavor.
2. Assemble the Skewers: Preheat your grill or grill pan over medium heat. Thread the marinated chicken pieces onto the soaked wooden skewers, ensuring even spacing for thorough cooking.
3. Grill the Skewers: Grill the chicken skewers for about 12-15 minutes, turning occasionally, until fully cooked and slightly charred on the edges. The internal temperature of the chicken should reach 165°F (75°C). Remove from the grill and set aside.
4. Prepare the Bang Bang Sauce: While the chicken is grilling, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic powder in a small bowl. Adjust the level of sriracha for preferred spice.
5. Serve: Drizzle or brush the Bang Bang sauce over the grilled chicken skewers. Alternatively, serve the sauce on the side for dipping. Garnish with chopped fresh cilantro or green onions for added freshness if desired.
