• 12 fully cooked breakfast sausage links, cut in half
• Nonstick cooking spray or additional butter for greasing

Instructions:
1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin with nonstick spray or melted butter.
2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. Combine Wet Ingredients: In a separate bowl, beat the egg, then whisk in the buttermilk, melted butter, and vanilla extract.
4. Make Batter: Gradually stir the wet mixture into the dry ingredients until just combined. Do not overmix—some lumps are fine.
5. Assemble Bites: Spoon about 1 tablespoon of pancake batter into each mini muffin cup. Place one half sausage link vertically in the center of each cup.
6. Bake: Bake for 12–15 minutes, or until the tops are golden and a toothpick inserted into the batter (not the sausage) comes out clean.
7. Cool and Serve: Let cool for 5 minutes in the pan before transferring to a serving platter. Serve warm with maple syrup for dipping.
