Hotel-Style Vatha Kuzhambu Recipe | Sundakkai Vatha Kuzhambu

Learn how to make a flavorful and traditional Sundakkai Vatha Kuzhambu step by step! This tangy, spicy tamarind-based curry is perfect to pair with steamed rice, appalam, or fried sides like brinjal or potato.

Ingredients:

Gingelly oil – 100 ml
Chana dal – 1 tsp
Mustard seeds – 1/2 tsp
Asafoetida – 1/4 tsp
Tamarind – small lemon-sized ball
Turmeric powder – 1/4 tsp
Salt – to taste
Jaggery – 1 tsp
Curry leaves
Red chilli - 2
Small onions – 100 g
Chopped garlic – 4-5 cloves

For the masala:

Red chilies – 10
Coriander seeds – 2 tbsp
Chana dal – 1 tsp
Peppercorns – 1 tsp
Fenugreek seeds – 1/4 tsp
Sundakkai Vathal (Turkey Berry) – 50 g

Method:

1. Heat 100 ml gingelly oil in a pan. Fry the sundakkai vathal until dark brown, then set half of it aside.

2. Remove excess oil from the pan,, roast chana dal, peppercorns, coriander seeds, red chilies, and fenugreek seeds over low to medium heat until aromatic. Allow it to cool and grind into a fine powder along with half the fried sundakkai vathal.

3. Add oil, then temper mustard seeds, chana dal, dried red chilies, curry leaves, asafoetida, and turmeric powder.

4. Add tamarind water, 3 tablespoons of the prepared masala powder, and the remaining sundakkai vathal. Adjust the consistency by adding water as needed.

5. Season with salt and let the kuzhambu simmer until the oil separates.

6. Add jaggery, mix well, and turn off the heat.

Serve hot with rice, accompanied by crispy appalam or fried vegetables. Enjoy this authentic South Indian delicacy!
