Vegan chickenㅣeasy seitan for beginners + a teriyaki recipe!

I have been experimenting with seitan for years but these 'chicken' like shreds are my favorite. This is an easy recipe with as few steps and ingredients as possible, so it's great for anyone curious about making their own meat substitutes. You can add more tofu for a softer texture, or less for a more chewy texture. Experiment with seasoning. Make this recipe your own! I usually make a large batch and store it in the freezer for up to two months.

Ingredients for 'chicken' seitan:
- 400 gr / 15 oz / 1 tin of canned chickpeas including liquid
- 50 gr / 1/4 cup of tofu
- 50 ml / 1/4 cup water
- 3 tbsp vegetable oil
- 1 tbsp white miso
- 1 tbsp rice vinegar
- 1 tbsp / 1 bouilion cube
- 1 tsp onion powder
- 250 gr / 1 3/4 cup vital wheat gluten

Ingredients for teriyaki seasoning:
- tbsp sesame oil
- 1 clove of garlic
- same amount of fresh ginger
- 1 tbsp sugar
- 1/4 cup light soy sauce
- 1/3 cup water + 1 tsp cornstarch (optional)
- sesame seeds and spring onion for serving
