Sous Vide CRISPY PORK! Picnic Pork Shoulder Sous Vide

There is nothing better than a tender juicy and CRISPY pork cooked right. Today I choose to cook a picnic pork shoulder where I first sous vide it, than followed a complex process to make it very, very crispy aka crackling pork. I combined all the research I have done, from Chinese cooking to Cuban cuisine and many other to attempt this almost impossible task.

HOW TO COOK PICNIC PORK SHOULD SOUS VIDE
I cooked it for 24hrs @ (165°F / 73.8°C)
