Need-More-Rice Scallion Chicken
"Need-More-Rice Scallion Oil Chicken"
I learned this from a Chinese home cook's video years ago when I was first learning how to cook.
I was amazed that a noob like me could make something so delicious with just a few pantry ingredients you'd find in any Asian Chinese household.
Ingredients
Chicken leg
(A) Stock
Scallions
Ginger
Garlic
Onion
Chicken stock/waterSalt
(B) Sauce
Oyster sauce
Light soya sauce
Sesame oil
(C) Aromatic Oil
Garlic
Oil
Fresh chopped scallions
Crunchy preserved radish from @teaneanlocalproducts
Method
1. Place chicken + (A) in a pot and bring to boil.
2. Immediately lower heat to minimum and cook gently for 20 min.
3. Remove chicken and cover with COLD water to stop cooking process, so that chicken remains tender.
4. Shred chicken by hand when it is cool enough to handle.
5. Mix together (B).
6. In a pot, cook garlic in oil until fragrant. Sprinkle chopped scallions and (B) over your chicken. Drizzle hot oil over the top to bring out the scallions' aroma.
7. Serve with crunchy preserved radish.. it really elevates the dish!!
