Ingredients (serves 2)

2 cups rice, cooked and cooled
2 cloves garlic, minced
1/2 cup kimchi, chopped
1 tbsp kimchi juice
1 tbsp soy sauce
1/2 cup cabbage, chopped
1/2 tsp sesame oil
2 eggs
Toppings (optional): anchovies, furikake, spring onions

If there's one thing that COVID19 changed, it's that Kdramas are now a permanent fixture in my life, haha!

Something I've noticed is that Kdramas tend to feature a LOT of eating scenes, with at least one food that is distinctive to the show. You have sundubu jigae courtesy of Itaewon Class, while the recently concluded Start-Up triggered massive cravings for corndog!!

One of the EASIEST dishes that you can prepare is kimchi fried rice! Savoury, lightly spicy and tangy, it hits all the Korean flavour notes!

This basic recipe is delicious as it is. But you can up the ante even further by adding cheese. After the rice has finished frying and is still in the wok, just sprinkle the top with a melty cheese like mozzarella and cover with a lid for a minute or two until the cheese melts. Voila, you’re done!
