Parsi Ras Chawal | Mutton Curry with Rice | Mutton Curry in Pressure Cooker

This is a dish cooked very frequently in Parsi households
Its a simple Mutton curry (This Mutton Gravy) served with Rice tempered with Garam Masala, Cumin seeds and fried onion.

Ingredients
Ingredients for Mutton gravy
6 tablespoons oil
8 cloves - 8 green cardamon
2 large Cinnamon sticks - 8 pepper corns
750 gms Mutton on the bone
4 medium onions chopped -2 medium tomatoes chopped
2 teaspoons ginger garlic paste
3 to 4 green chillies finely chopped
1 and 1/2 teaspoon kashmiri chilli powder
1 teaspoon cumin powder - 1 and 1/2 teaspoon salt
1/2 teaspoon pepper powder - 1/2 teaspoon turmeric powder
3 medium potatoes cut in large pieces
1/2 cup fresh coriander leaves
Ingredients for Rice
500 gms Basmati Rice (washed and drained)
8 cloves - 8 green cardamon - 2 large Cinnamon sticks - 8 pepper corns
1 and 1/2 teaspoon cumin seeds - 1 medium onion sliced
1 and 1/2 teaspoon salt - 4 tablespoons oil

Method
Place a pressure cooker on medium high heat and add 6 tablespoons oil
Add 8 cloves, 8 green cardamon, 2 large Cinnamon sticks, 8 pepper corns and give it s stir
Add 4 medium onions chopped and fry for 5 to 6 minutes until the onions turn creamish in colour
Add 2 teaspoons ginger garlic paste, 3 to 4 green chillies finely chopped and fry for 2 minutes
Add 2 medium tomatoes chopped to this and fry for another 2 minutes
Add to this 1 and 1/2 teaspoon kashmiri chilli powder, 1 teaspoon cumin powder, 1 and 1/2 teaspoon salt, 1/2 teaspoon pepper powder,
1/2 teaspoon turmeric powder, 1/2 cup fresh coriander leaves and cook for 2 to 3 minutes
Add 750 gms mutton to this and stir and cook for 3 to 4 minutes
Add 3 cups water and stir everything
Pressure cook for 3 to 4 whistles
Open the cooker after it has cooled and give everything a stir
Add 3 medium potatoes cut in large pieces to this and Pressure cook for 1 whistle
open the cooker after it has cooled and remove and set aside

Rice Prep
Take a large pot, place on medium high heat
Add 4 tablespoons oil and add to this 8 cloves, 8 green cardamon,
2 large Cinnamon sticks, 8 pepper corns, 1 and 1/2 teaspoon cumin seeds and give it a stir
Add 1 medium onion sliced and fry until golden
Add 500 gms Basmati Rice (washed and drained) and stir for 30 seconds
Add 5 cups water and bring to a boil turning the heat to high
Cook on open for 10 minutes on high
Turn the heat to low, cover and cook for another 15 minutes
Open and set aside for 10 minutes before serving
