Homemade Egg Tofu 自制蛋豆腐

We always like to order this signature tofu in our local "da chow" restaurants. It's an easy and healthy dish which suitable for whole family! You can try this at home too!
Recipe:
Ingredients:
------------------
3 Eggs
Unsweetened Soy Bean Milk (250ml)
Corn Flour (1 Teaspoon)

Sauce
-----------
Oyster Sauce (1 Tablespoon)
Concentrated Chicken Stock (1 Teaspoon)
Water (200ml)
Few dash of White Pepper
Sugar (1/2 teaspoon)
Minced garlic (2 cloves)
Corn Starch (2 tablespoons)

Vege
--------
Sliced Carrot
Sugar Snap Peas (6 pcs) - trim and cut half
Spring Onions

1. Combine eggs, soy bean milk and corn flour in a bowl.
2. Coat glass container with olive oil. Strain the mixture.
3. Cover with aluminium foil and steam over medium heat for 15 minutes.
4. Let it cool down completely.
5. Cut egg tofu to required size and coated with corn flour.
6. Heat cooking oil over medium heat, deep fry egg tofu till golden brown. Drain and set aside.
7. Stir fry minced garlic, veg and add in sauce.
8. Cover and cook till sauce is boiled. Add in corn starch.
9. When sauce is thickened, add in chopped spring onions.
10. Ready to serve.
