Spinach Cheese Ravioli (Vegan) | Recipe Video in Vieques with a Guest

The Plant Killer & Oscar Modifications:
Vegan Spinach Ravioli with Marinara
4 Servings (multiply by 5 to serve 15-17 guests)
For the ravioli:
- 2 1/2 c flour
- 1/2 tsp salt
- 3/4 c water
- 2 tsp olive oil
For the spinach filling:
- 2 c packed spinach
- 1/2 c white onion, chopped
- 1/4 c green onion, chopped
- 1 tbsp garlic, minced
- 8 oz. plant-based cream cheese
- 1/2 block extra firm tofu (7 oz.)
- 3.5 tbsp nutritional yeast
- 1/2 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp olive oil
- 2 tbsp lemon juice
For the marinara:
- 1 can tomato sauce
- 1/2 c tomato paste
- 1/2 cup basil
- 1/2 white onion, chopped
- 2 tbsp garlic, minced
- 1 tbsp Italian seasoning
- Sriracha and red pepper flakes, to taste
- 1 tsp salt
- 1 tsp pepper
Instructions:
Ravioli dough:
1. Combine the flour and salt. Create a well in the center to slowly add and mix in the water and oil.
2. Knead and form into a ball.
3. Wrap in plastic wrap and place in the fridge for at least 30 minutes.
Spinach cheese filling:
1. Chop spinach.
2. Add the filling ingredients into a food processor and blend until smooth.
Marinara:
1. Pulse ingredients in a food processor until fully combined.
To assemble ravioli:
1. Separate dough into sections and roll out thinly onto a floured surface.
2. Cut out circles with a round small bowl or cookie cutter. Place about 1 tbsp of spinach cheese filling in the center of the circle. Add less filling than you think you would need to avoid overflow. Brush the sides with light water and fold over pinching the sides carefully. Press down the outside edges with a fork.
3. Bring salted water to a boil in a large pot. Carefully place the ravioli into the water and let simmer for a couple minutes until they float to the top.
4. Remove with a straining ladle.
5. Option to place the ravioli in the oven at 450℉ to lightly crispen.
6. Serve with the marinara and your favorite plant parmesan cheese or salad.
