Punch Romaine from Hannibal | How to Drink

Hannibal Lecter, the suave cannibal, served this cocktail made famous by its inclusion on the Titanic's dinner menu to a "guest" of his just before... ahem. Let's make it!

Punch Romaine was invented by Auguste Escoffier, the guy who's kinda responsible for putting French Cuisine on the map ( He codified the five mother sauces). Escoffier was a big fan of shaved ice "intermezzo's" which is a kind of palette cleanser served between courses. This one, Punch Romaine, is sort of a prototype of a frozen daiquiri but about as extravagant and opulent as you can imagine.

Punch Romaine
• .5 oz. -or- 15 ml. Simple Syrup
• 1 oz. -or- 30 ml. Orange Juice
• 1 oz. -or- 30 ml. Rum
• 1 oz. -or- 30 ml. Fino Sherry
• 1 Egg White
• Dry Shake
• Shake with ice
• Strain over a pile of shaved ice in a coupe or trifle
• top with champagne
• Garnish with an Orange Twist
