Kids ask to make them every day and this recipe is over 100 years old! Best dessert! Caramel eclairs!
Hello friends!
Today we have choux pastry cake with caramel cream!
Sugar (100g / 4 tbsp).
Heat over low heat until brown.
Stir until the sugar dissolves.
Cream 33-36% (150 ml / ⅔ cup).
Allow to cool in the refrigerator.
Milk (80 ml / 1/3 cup), water (45 ml / 3 tbsp).
Sugar (5 g / 1 tsp), a pinch of salt.
Butter (50g / 1.7oz).
Bring to a boil.
Flour (60g / 2/5 cups).
Mix quickly until a homogeneous and smooth dough is formed.
Let cool for 5-7 minutes.
Eggs (3 pieces).
Add eggs in 3-4 batches.
The dough should flow smoothly from the spatula and form a triangle.
Nozzle 15-16mm.
Diameter 6-7cm Flour.
Bake at 180°C for 40-45 minutes WITHOUT fan oven. DO NOT OPEN THE OVEN.
Caramel icing:
Sugar (125 g / ⅔ cup).
Heat over low heat until brown.
Stir until the sugar dissolves.
Butter (40 g / 2 tbsp).
Cream 33-36% (80ml/⅓ cup).
For cream:
Cream 33-36% (300 ml / 1+1/2 cups).
Beat until thick.
