Bak Kut Teh: Singapore & Malaysia's Iconic Pork Rib Broth
Bak Kut Teh is a must eat item on any food tour of Singapore or Malaysia. We taste the legendary Song Fa Bak Kut Teh and I share my adapted recipe for cooking this heartwarming South East Asian dish at home!

► Bak Kut Teh recipe
600g pork spare ribs
400g chicken wings (optional)
the cloves of 2 bulbs of garlic
2 tsp white peppercorns, lightly cracked
1/2 tsp black peppercorns, lightly cracked
1 stick of cinnamon
2 pieces star anise
salt to taste
for the roux:
rendered fat from roasted ribs & wings
1,5 Tbsp all purpose flour
thick rice vermicelli (optional)
lettuce (optional)
► Lazy Youtiao recipe
100g flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
75g water
oil for frying
► Sweet & Sour Pak Choi
3 large pak chois, or 6 small ones, diced
2 Tbsp bak kut teh broth or water
1 tsp sugar
salt to taste, roughly 1/2 tsp
1 Tbsp white rice vinegar
► Easy Braised Peanuts
1 cup raw peanuts, skin on
1 cup bak kut teh broth or water
1 tsp five spice powder
1 Tbsp dark soy sauce
simmer on low for at least 20 minutes, adding water if necessary
