Spicy Zucchini Curry

This Spicy Zucchini Curry is so flavourful and easy to make! Serve it with some rice or roti fir a delicious vegetarian meal 😋

Ingredients
- 3 tbsp of ghee
- 1 tsp of mustard oil
- 1 small onion, diced
- 1 tbsp of garlic + ginger paste
- 1 tbsp of hot chilli powder
- 1 tsp of turmeric
- 1 tsp of paprika
- 1 tsp of cumin powder
- 2 tsp of coriander powder
- 6 medium sized zucchinis, chopped
- salt, to taste
- 1 cup of hot water

Method
1. Heat the ghee and when it melts, add the mustard seeds
2. Once the mustard seeds start spluttering, add the onion and garlic ginger paste
3. Once the onions turn translucent, add all the spices in the caption and fry them off for a couple of minutes, until they’re fragrant
4. Add the zucchini and cover with the spices
5. Season with salt and Add some hot water before simmering on low for about 10-15 minutes, or until the zucchinis are soft
6. Enjoy!
