COOK WITH ME - Gnocchi alla Justin Bieber

I attempted to recreate the famous Paccheri alla Justin Bieber which is served at none other than the Il Pastaio Italian restaurant in Beverly Hills, California. This dish consists of artisan wide rigatoni smothered in pink sauce with fresh parmesan, however, i substituted the rigatoni with gnocchi because that's just how we roll here.

Ingredients

Gnocchi (about 12 servings):
3 russet potatoes
3 cups flour
1/4 cup freshly grated parmesan cheese
1 cup whole milk ricotta
2 eggs
salt & freshly ground black pepper, to taste

Pink Sauce:
2 cups tomato puree (use Mutti or an italian brand if you can find)
3-4 tablespoons extra virgin olive oil
2 shallots
5-7 cloves of garlic (i like my food extra garlic-y)
1/2 cup dry white wine
2/3 cup heavy cream
1 cup freshly grated parmesan cheese
