BEACH ADVENTURES & A RATHER LARGE PUMPKIN! | The Positano Diaries EP 96

My friend Ivan loves to invite his friends to dress up in the clothes he designs and sells in Positano. So we took a bagful of pretty dresses to a deserted beach and made a day of it with a picnic too!

To preserve pumpkin:
First sterilise the jars (2 minutes in the microwave - without lids- is fine.
Carve off the pumpkin skin and slice the flesh into thin strips. Bake in oven, at 200c for 15 minutes.
Add inch deep layers of pumpkin with garlic, chilli pepper and herbs (i used rosemary and sage) and cover each layer with olive or vegetable oil. Keep going unti the jar is full. Make suer all the pumpkin is covered with oil. If saving for future use boil the sealed jars for 25 minutes to seal them.
