2 lbs chicken thighs (boneless, skinless)
1 tbsp Cattleman’s Grill Ranchero Seasoning (or any savory seasoning blend)

1/3 cup all-purpose flour
1 tsp smoked paprika
1 tsp dried tarragon
1 tsp fresh thyme
1/3 cup cognac (for deglazing)
2 cups chicken stock
1 cup heavy cream
1 tbsp Dijon mustard
2 tsp Worcestershire sauce
5 oz Boursin cheese (Garlic & Fine Herbs flavor)
1 cup smoked Gouda cheese (shredded)
1 cup frozen peas
Salt & freshly ground black pepper (to taste)
