Wild Spring foraging! Wild Spring Beauty

There isn’t much time to find and harvest one of the tastiest spring edibles of the region! Spring Beauty (Claytonia virginicia) AKA “Fairy Spud” is a five petaled white flower with pink stripes often present. The roots or corms are the most delicious part of the plant, but all parts are edible, both raw and cooked. I will show you how to find, collect and prepare this wild green. A foragers delight!!
