What is the Purpose of Pectic Enzyme?
Pectic enzyme or Pectinase is an enzyme that breaks down Pectin. Pectin is found in grapes and mostly all fruits and it what makes Jellies and Jams have their gelatin like consistency. If there is too much pectin in the wine it will cause a haze that will not clear up. This is a problem if you are trying to make a crystal clear white wine. Pectic enzyme will eliminate this but must be used before fermentation as it is less effective in the presence of alcohol. Pectic Enzyme also helps increase juice yields when pressing from fruit. It is a very useful ingredient for the home winemaker!
