Legendary crispy pan börek from broken dry phyllo
2 eggs
half a cup of milk and oil
2 dough sheets
1 each zucchini, carrot.
1/3 cup of feta cheese
1 teaspoon of salt
1 teaspoon of baking soda
chopped parsley
oil for cooking
I cooked on medium heat and turned it upside down with the help of a flat lid or plate that fit into the pan. and continued to cook by turning it occasionally until golden and crispy.
Strawberry Pie: (In the video I made half recipe)
For the strawberry filling:
4 cups peeled, washed and finely chopped strawberries
1/2 cup of granulated sugar
1/2 cup + 2-3 tablespoons more water if needed
3 leveled tablespoons of starch + 1 teaspoon more if needed
For the pie dough:
150gr. cold butter (diced)
3 tablespoons of granulated sugar
1+1/2 to 2 cups sifted flour
half a pack of baking powder
1 large egg
1 tablespoon of granulated sugar for sprinkling on top
plus 1 egg yolk
small heart cookie mold (or leaf, star, flower, round etc.)
approximately 23cm round slice mold with high sides (preferably glass)
To make the strawberry filling, chop the strawberries (more than half a kilo) that you have cleaned and washed into 3-4 pieces according to their size.
Measure 4 cups of strawberries into a medium saucepan. Mix the water with the starch in a bowl and add it to the strawberries, add the granulated sugar and mix.
Start cooking by stirring over medium heat. After 3-4 minutes of boiling, when it thickens turn off the heat and leave it to cool. You can add a bit more water if it is too thick or add starch if thin.
To make the pie dough, mix the sugar, oil, and a little over ½ of the flour and baking powder for the dough in a food processor until it's like wet sand.
Add the egg and press and pull until it becomes a dough, combine and form a dough. (you can add some water to combine if needed)
Take the dough and divide it into two pieces, one slightly larger than the other. For easy rolling, shape it into a disc, wrap it in plastic wrap and leave it in the refrigerator for half an hour.
Roll out the large dough a little more than the size of the pie pan on a lightly floured countertop and place it in the pan.
Roll out the other dough a little thinner, cut pieces with a mold or make lettice design.
Pour the cooled filling into the base. Brush the edges of the dough with lightly beaten egg white place the second part on top.
Brush the egg yolk and bake in the 210C degree oven.
After 20 minutes, reduce the heat to 170C and cook for another 20-25 minutes until golden brown.
