2) Peel apples
3) Core Apples
4) Slice Apples into wedges
5) Cover and simmer apples with water, lemon juice, cinnamon sticks, and star anise
6) Stir occasionally
7) Add vanilla
8) Remove Cinnamon and Star Anise
9) Mash/Blend
10) Transfer to Jars
11) Enjoy
